The best part of this meal was the salad dressing. Its so simple. Take 1 cup marinated artichoke hearts, 2 tablespoons fresh thyme, 1/4 olive oil and 1/8 red wine vinegar in a food processor. And that's it! Its also really good to dip cucumbers in!
